Shanghai's culinary scene continues to shine brightly on the global stage, with an impressive 145 restaurants earning a coveted place in the 2025 Shanghai Michelin Guide. Of these, an exceptional 52 have been awarded prestigious Michelin stars, further cementing the city's reputation as a world-class dining destination.
The release of the 2025 Michelin Guide is a momentous occasion in the global food scene, with chefs and restaurants vying for the coveted stars. In Shanghai, a city known for its vibrant and diverse dining culture, the stakes are especially high.
At a press conference this morning at Bellagio by MGM Shanghai, Michelin announced its 2025 picks for Shanghai in their ninth installment of the city's guide. Receiving a Michelin star can catapult a restaurant into the limelight, attracting food lovers and critics alike, while losing one can be considered a precursor to inevitable downfall. Whether you buy into the Michelin hype or not, the guide not only influences diners’ choices but also impacts our city’s chefs, restaurants, and the entire hospitality industry.
While the total number of starred restaurants only increased by one from the previous year, the great shuffle continued as a few institutions fell off the list (or closed), their spots quickly taken up by others.
For the fourth year in a row, two venues remain alone at the top of the pack – Taian Table continues to retain its trio of stars under founder Stefan Stiller and Executive Chef Christiaan Stoop. The Taian Table team has also been awarded the Green Star award for its dedication to being at the forefront in the industry when it comes to sustainable practices. Similarly, Paul Pairet's Ultraviolet maintains its three-star ranking for another year in a row.
In the two-star category, Fu He Hui has graduated to two-star status, recognized for its seasonally sourced vegetarian fine dining fare that celebrates regional produce from across the country, curated by chef Tony Lu.
As expected, the one-star category saw the most shake-up with five new entries (see those marked ‘new’ below) along with four drop-offs (Jean Georges and Tea Culture dropped down to Michelin Select and New Wave by Da Vittorio and Yu Zhi Lan closed), plus Fu He Hui ascending to two stars.
With each star awarded, the culinary landscape shifts, and new contenders emerge. It’s a thrilling time filled with delicious tension, where every bite counts!
Before we get on to the full winner’s list, a quick explanation of how the ratings works: With esteem and status that can boost a restaurant to the top of the ranks, the Michelin Guide identifies the best of the best in regional dining, breaking down their picks into nine categories: Three Star, Two Star, One Star, Bib Gourmand, Michelin Plate, Young Chef, Sommelier, Service, and Green Star Award.
